Gluten Free Banana Bread

Directions

  1. Set oven to 350F & line a loaf pan with parchment paper.

  2. Sift together the dry ingredients except for the sugar and chocolate chips in a small bowl and set aside.

  3. Mash the bananas and add eggs, oil and vanilla.

  4. Combine the wet and dry ingredients and fold in the chocolate chips. I always save a few for the top.

  5. Place in the preheated oven and bake for 50-60 minutes until a toothpick comes out clean

  6. At the 30 minute mark, cover the top of the bread with parchment paper to allow it to cook through without browning the top too much.

Notes

Pan Size: This recipe fit in a standard size loaf pan.

1/2cup Brown Rice Flour

½ cup Buckwheat Flour

½ cup Arrowroot Flour

3 Eggs

3 Bananas

½ cup Olive Oil

1/2c Coconut sugar or granulated

2 tsp Vanilla

2 tsp Cinnamon

1 1/2 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp Sea Salt

1/2 cup Dairy-free Chocolate Chips
